This is a detailed step by step viazi karai recipe,for those crunchy viazis we all love.My people love this and they are my inspiration.
Cooking Instructions

Wash your potatoes clean and boil them for about 20 minutes.Do not over do.

Remove from the stove,strain and let them cool for about half an hour.If you are in a hurry you can cool under cold water tap.

Once they have cooled,peel the skin thinly and dice into desired cube size.

In a big bowl add 1 cup flour,2cloves crushed garlic,a pinch of food color and some salt to taste.

Add water gradually and make a not so thick paste.Add your potatoes.

Get the oil ready for deep frying.Using your hands gently mix and ensure all potatoes are coated and prep your receiving area.

Fry in portions and allow them to crunch if that's how you like it.

I served mine with ukwaju sauce and my favourite tomatoes, garlic and chilli sauce.
