Pav Bhaji is favourite snack whenever I go out for evening knick knacks but because of dicey situation would like to make it at home and enjoy.
I love to cook bhaji more in the winter because of the seasonal fresh vegetables also.
The cooking time doesn't include preparation time. It's only the time required to cook the Bhaji.

Ingredients

4 servings
  1. 300 gmsboiled, peeled and roughly smashed potatoes
  2. 1/2 tspWhole coriander seeds
  3. 50 gmsFrench Beans
  4. as neededFistful of shelled Fresh peas
  5. 50-55 gmscarrot chopped
  6. 30 gmsSmall Red Bell Pepper chopped (optional)
  7. 90-100 gmsonion chopped
  8. 120 gmstomatoes
  9. 2green chillies chopped
  10. as required Little green coriander leaves chopped
  11. 2 tbspVeg oil
  12. 1 tbspButter
  13. 1.5 tspChaat masala
  14. 1/2 tspBlack Rock salt
  15. as required Hot water
  16. Dry spices
  17. 1 tspCummin/Jeera powder
  18. 1 tspCoriander/Dhania powder
  19. 1/2 tspGaram masala powder
  20. 1/4 tspTurmeric Powder
  21. 1.5 tspKashmiri Red chilli powder
  22. 1/2 tspGarlic powder (you can use fresh too)
  23. 1/2 tspGinger powder (you can use fresh too)
  24. For serving
  25. As per requirement Pav Buns as needed toasted in Butter
  26. as required Onion chopped/ sliced
  27. as required Green Coriander Leaves chopped
  28. as required Lemon wedges
  29. As required Dollops of Butter

Cooking Instructions

    Prepare the ingredients- vegetables as needed, mix & soak the dry spices in little water and make it like a paste. Peel the boiled potatoes and roughly smash it.

    Now take oil and butter in a pan or kadai and first add while dry coriander seeds,once it crackles add onion and saute till its translucent, then add the vegetables except the bell pepper, tomato and potato and cook for 5-10 minutes...then add the bell pepper and the spice paste and cook for 5 minutes or so....add water when required. Add the tomatoes and cook till it soften and cook. Add in little Coriander leaves too while it cooks. It gives a nice flavour to the Bhaji.

    Add the smashed potatoes and mix well and then add water as needed may be about a cup. Cover and cook for about 10 minutes. Check consistency, it should neither be watery nor dry, check salt and add if needed.Once done....serve hot with a dollop of butter, onion, chopped coriander leaves and lemon wedges accompanied with warm butter toasted Pav Buns. Bon Appetit!!!
