Ingredients

20 minutes
5 servings
  1. 4medium boiled potatoes
  2. 1 cupblanched spinach puree
  3. 2medium onions chopped fine
  4. 2medium tomatoes chopped fine
  5. 1/2of big capsicum chopped fine
  6. 1/2 cupgreen peas (fresh or frozen)
  7. 2 cupswater
  8. 1large green chilli
  9. 8-9garlic cloves
  10. forSpice powders:
  11. 1/2 tspred chilli powder
  12. 1 tspcoriander cumin powder
  13. 1/4 tspturmeric
  14. 2 tsppav bhaji masala
  15. 2 tbspamul butter
  16. 2 tbspoil
  17. to tasteSalt
  18. forgarnishing:
  19. 200 gramschopped coriander
  20. 2large onions chopped fine
  21. some Tomato slices
  22. fewLemon wedges
  23. as requiredAmul butter
  24. as requiredPav buns

Cooking Instructions

    Blanch spinach and puree it.

  2. 2

    Grind green chillies and garlic cloves with 2 tbsp water to a paste.

  3. 3

    Keep the peas,chopped capsicum and boiled mashed potatoes ready.

    Heat oil in a pan. Add chopped onions and saute. Next saute with the chilli garlic paste. Next add the chopped capsicum and saute nicely.

    Add green peas and 2 tbsp water. Pressure cook for 2 whistles.

    Add chopped tomatoes,spice powders except pav bhaji masala and salt.

    Mash with a masher as it's cooking

    Add the pav bhaji masala.Add the mashed potatoes and continue mashing with the masala

    Add spinach puree. Then goes in 2 cups of water.

    Add a blob if butter.Simmer and cook for 10 minutes..

    Squeeze 1/2 a lemon. Simmer for a minute and switch off.

    Toast the paste with generous amount if butter on hot tawa. Keep the onion and lemon wedges ready.

    Garnish with freshly chopped onions,freshly chopped coriander,a blob of butter,lemon wedges, tomato slices and butter toasted pavs.
