Ingredients

  1. 1 1/2 cupspart skim ricotta or low fat cottage cheese or combination
  2. 1/2 cupGreek yogurt
  3. 2 cups (16 ounces)ounces firm or extra firm tofu, crumbled
  4. 1 cupshredded mozzarella
  5. 1/2 cupshredded Parmesan
  6. 1 cuphummus
  7. 1egg
  8. 10 ounceschopped spinach
  9. Handfulchopped parsley
  10. Handfulchopped basil
  11. 1 teaspoonsalt
  12. 1 tbsnutritional yeast
  13. 1/2 teaspoonground pepper

Cooking Instructions

  1. 1

    Shred tofu into crumbles in food processor

  2. 2

    Mix in all other ingredients

  3. 3

    Use as layer(s) for any lasagna.
