Slow cooked pulled pork with sweet potato mash and healthy slaw

I love pulled pork but have never made it before so visited to butcher to get a pork shoulder to test it out in the slow cooker. So simple I’ll try pulled chicken next!

Ingredients

2 servings
  1. 1 kgpork shoulder
  2. 1onion
  3. 2 cloves of garlic
  4. Cajun spice rub
  5. Oregano
  6. For the cooking liquid
  7. 150 mlapple juice
  8. 1 tsphoney
  9. 1 tspsoy sauce
  10. 1tbsb onion and tomato chutney
  11. Dashbalsamic vinegar

Cooking Instructions

    Remove the skin and save to make crackling. Rub the meat in the Cajun spice and oregano

    In a hot pan sear on all sides to seal the meat

  3. 3

    Slice the onion and crush the garlic. Add to the slow cooker and place the pork on top

  4. 4

    Mix together all the cooking liquid ingredients and poor into the slow cooker

  5. 5

    Cook on a low heat for 6-8hrs or until the meat falls apart

  6. 6

    Remove the pork from the cooker and pull apart with a couple of forks.

  7. 7

    Top with some of the cooking liquid

  8. 8

    Serve with healthy slaw (see link) and sweet potato mash. Also goes well in a brioche bun!
