Ingredients

  1. For dough
  2. 2 cupsrefined flour
  3. 1/4 cupmelted ghee
  4. 1 tspcarom seeds
  5. 1/2 tspsalt
  6. 1/2 cup water
  7. For stuffing
  8. 3-4potatoes boiled and mashed
  9. 1/4 cupgreen peas boiled
  10. 1 tspcumin seeds
  11. 1/4 tspasafeotida
  12. 1 tspcrushed coriander seeds
  13. 3-4green chillies finely chopped
  14. 1 inchginger finely chopped
  15. 1/4 tspturmeric powder
  16. 1 tspcoriander powder
  17. 1 tspred chilli powder
  18. 1/2 tspgaram masala powder
  19. 1/2 tspblack salt
  20. 1 tspamchur ( dry mango)powder
  21. to tasteSalt
  22. as neededOil for frying

Cooking Instructions

    In a mixing bowl add flour,carom seeds and salt. mix well the add ghee mix all. Well to make a crumbly texture. Gradually add water and make a hard dough. cover and keep aside for 15-20 minutes

    Take a pan add 1 tbsp oil heat it add asafeotida,cumin seeds, green chillies and ginger saute a minute then add peas and turmeric powder. Mix and cook for a minute.

    Now add boiled and mashed potatoes and all the above spices. Mix all together cook for 2-3 minutes. Turn off the flame let cool down the mixture.

    Take the dough make small balls. take one ball roll it like roti.with a sharp knife cut into middle take one part apply water on lower edge then fold it like a cone.

    Take the potato filling out one tbsp filling in the cone. apply water on the edges and seal it with the help of fingers. prepare all samosa likewise.

    Heat oil in a kadhai on medium flame add some samosa in hot oil fry it on low to medium flame until they turns golden brown. Fry all samosa in batches. Serve with chutney and enjoy.
