Fresh vegetable and fruit salads are very good for our body. Chia seeds are a very healthy addition to any salad. Chia seeds have many health benefits.
Roasted beetroots give a sweet and earthy taste to the salad while fresh oranges and orange juice dressing gives it a nice tangy taste. Microgreens are also added to the salad for extra health benefits.
It is a very healthy and tasty salad which can be served as a a side dish or even as a light meal.

Ingredients

  1. 1 tbspchia seeds
  2. 3medium beetroot
  3. 1orange
  4. 3lettuce leaves
  5. 1/2 cupmicrogreens
  6. for Dressing
  7. 1/4 cuporange juice
  8. 1/2 teaspoonsalt
  9. 1/2 teaspoonblack pepper powder
  10. 1/2 tbsphoney

Cooking Instructions

    Soak chia seeds in warm water for 30 minutes to 1 hour so that it will bloom.

    Wash beetroots and cut it into half and arrange it on a greased baking tray. Bake it at 200 degree for 40 to 45 minutes in a preheated oven. You can even steam them instead of baking.

    Remove skin from the beetroots and cut it into slices. Cut orange into segments. Wash and prepare lettuce leaves.

    To prepare dressing, add all the ingredients given for dressing in a bowl and mix it very well. Now add 2 tbsp soaked chia seeds to it and give it a good mix.

    Add Beetroot, Orange segments, lettuce leaves, microgreens and remaining chia seeds in a big bowl. Now add dressing over it and give it a good stir.

    Garnish the salad with microgreens and serve it as a side dish.
