Ingredients

25 minutes
4 persons
  1. 1 cuproasted vermicelli
  2. 30 mlrefined oil
  3. 1 tspmustard seeds
  4. 1 tspcumin seeds
  5. 1/2 tspgota urad dal
  6. 1/2 tspchana dal
  7. 2-4fresh green chillies
  8. as required Fresh curry leaves (few)
  9. 1Chopped onion
  10. 1 tspgrated ginger
  11. as neededVegetables (beans, carrots, potato)
  12. as per need Add veggies of your choice
  13. As per taste Salt
  14. 1 pinchturmeric powder
  15. 1/2 tspsambar masala
  16. As required Hot water (1:1) ratio
  17. as per required If you like soft upma increase more 1/2 cup water

Cooking Instructions

    Place a kadhai, heat with oil. Splutter mustard seeds, cumin seeds. Add gota urad dal, chana dal, fresh green chillies and fresh curry leaves.

    Next add chopped onion and grated ginger. Saute till onion is translucent. Now add the vegetables.

    Put salt, turmeric and sambar masala. Mix well. Cover and cook at slow flame for 5-6 minutes.

    Side by side boil water. Take roasted vermicelli. If you don't have roasted vermicelli then in a separate pan put 1 tsp oil, into that put vermicelli and fry at slow flame till vermicelli turns brownish. Take out and keep aside.

    Put the roasted vermicelli into the cooked vegetables and mix gently. Let your vermicelli get oil coated. This makes the vermicelli non sticky in the upma.

    Now add hot water. Never add cold water. Give a gentle mix.

    Need not cover. Keep the flame slow. It will get cooked. Mix gently as you see almost cooked upma (so that upper layer of vermicelli too gets cooked.)

    The vermicelli absorbs the water and plumps up. You know upma is done. Switch the flame off.
    Do not disturb now. If you like cover the upma now for a minute or two.
    Then remove cover and carefully give a gentle mix.
    You can find the vermicelli will be nice non sticky.

    Your vegetable vermicelli upma is ready... serve hot
