#cookingwithherbs - You might have tried many versions of tabbouleh like quinoa tabbouleh, beetroot tabbouleh, even shrimp tabbouleh! Maybe some of them taste better than my recipe but keep this in mind: they are not REAL!

All you need are fresh local vegetables and a good knife because this salad will require a lot of chopping 🔪 🌿 🍅

Ingredients

3 servings
  1. 1big bunch of parsley
  2. Handfulmint leaves
  3. 2Medium firm tomatoes
  4. 2spring onions
  5. Handfulextra fine bulgur wheat soaked in water
  6. 1big lemon juice
  7. 1/3 cupgood quality olive oil
  8. 1 tablespoonpomegranate molasses (otpional, i didn’t add it)
  9. Salt
  10. What to eat it with (otpional)
  11. Lettuce/iceberg/cabbage leaves to scoop the tabbouleh in

Cooking Instructions

    Here are all the ingredients you will need

    Rinse your vegetables and soak the bulgur wheat in water for around 10 minutes until it’s soft, then drain

  3. 3

    Finely chop everything. You can use a food processor to chop the parsley leaves if that’s easier for you BUT DO NOT OVERDO IT or you’ll end up with a tabbouleh smoothie 🍹

    Place al the vegetables in one deep bowl

    (I chopped all the parts of the green onion but only a small part of the parsley stems)

    Add the lemon juice, olive oil, salt and bulgur (and pomegranate molasses if used) over the chopped vegetables and gently toss to combine.
