I saw the famous restaurant chef making this rice bowl on TV. So I cooked like the restaurant way, it was so delicious and soft.
Cooking Instructions

Cut chicken into bite size. Mix seasonings in pan and cook chicken.

Add onion when chicken is cooked. Then whisk eggs with chopsticks.

Pour half amount of egg on chicken. Stir a little and cook for a minutes or so. Then pour the rest of egg and cook just 15~30 seconds and turn off the flame.

Put it on cooked rice. Garnish with green.

Their way was more detailed, but my way is easier.The combination of rice flour and Katakuriko potato starch makes the chicken skin crispy. Use only ginger juice, otherwise the fiber of the ginger will get burned. It's ok to use grated ginger though. Deep frying twice makes the skin crispy and juicy inside.
