If you have a granadilla pulp can in you food cupboard almost near its expiry date and want something more savoury than sweet, but yet a little bit of sweet. The result: extra fluffy muffins!

Ingredients

30 min
12 muffins
  1. Dry Ingredients:
  2. 1 cupflour
  3. 1 1/2 cupdigestive bran
  4. 1 teaspoonbaking powder
  5. 1 teaspooncinnamon
  6. Wet Ingredients:
  7. 2ripe bananas
  8. 1 can (110 g)granadilla pulp
  9. 4eggs
  10. 1/2 cupolive oil
  11. 1/4 cupmilk

Cooking Instructions

    Preheat oven to 180’C.

    Spray a 12 hole muffin pan with cooling spray.

  3. 3

    Mix the dry ingredients in a large bowl.

  4. 4

    Mix the wet ingredients in a small bowl (mash the bananas).

  5. 5

    Mix the wet with the dry ingredients. Don’t overmix.

  6. 6

    Scoop in the muffin pan and bake for 15 minutes. Don’t over bake.

  7. 7

    Enjoy with honey or jam.

  8. 8

    Hint: the riper the bananas the better!
