Ingredients

1 cake to share
  1. Orange Cake part
  2. 2 cupsall purpose flour (or plain flour for uk)
  3. 1 cupvegetable oil
  4. 3large eggs (or 4 small size)
  5. 1 cupcaster sugar
  6. 2 tspbaking powder
  7. 1big juicy orange, whole, cut up and remove seeds
  8. Some extra vegetable oil or butter to spread on baking tray or baking mould
  9. Candied Orange Peel
  10. 300 mlwater
  11. 300 ggranulated sugar + 150g for coating
  12. Orange Peel from 2-3 large orange including rind, cut out into thin strips
  13. Extra for syrup
  14. 1whole lemon
  15. For deco (optional)
  16. Dried orange peels

Cooking Instructions

    Making cake: Place the orange in a food processor and blend thoroughly.

    Add oil, eggs, sugar into the blender and blend together again.

  3. 3

    Add flour and baking powder in the food processor and blend until all combine.

  4. 4

    Preheat oven on 180c. Spread on vegetable oil or butter all over inside of baking tray or baking mould, add batter in and bake at 180c for 40-50 min. Check cake after 35 or 40 min of baking by using the tip of small knife pushing through the cake, if it comes out clean means cake is baked. Take cake out from tin and let it cook down.

    In boiling water, cook the orange strips for 15-20 min, drain and leave to cook down, use knife scrap off some white part. Cut into thin strips.

    Add sugar and water in a small saucepan over medium heat stir continues until sugar has dissolved.
    Add orange peels and bring it to boiling point then reduce the heat to low, keep stirring for about 30-45 min until orange peels look soft, if you still have some liquid left, remove them into a small bowl as we will make syrup with them later. As soon as you see sugar starts to turn crystallised turn heat off.

    Line up a baking tray and baking paper, spread some sugar on surface, add orange in and toss them evenly to get sugar coated on. Take the coated orange peel out and keep them in a bowl.

    Transfer all the leftover sugar in the saucepan that we make orange peels earlier with the remaining sugar, and whole lemon juice, then put it back on low heat, stir until everything dissolved. Turn the heat off.

    Pour the syrup on top of your cake and deco with candied peel. Add dried orange for deco if prefer
