Mashed potato waffles

I had some homemade mashed potato leftover and being a #wasteworrior I can't leave anything unused!
This is the perfect way to use it up, so delicious that it's worth making a pot of mashed potatoes, just to make these waffles!
Since the mashed potatoes already had salt and pepper, I didn't add any. The extra cheese also makes it a bit more salty. So be careful
Of course you can add anything else you fancy in there!
I made 4 1/2 waffles with this amount, but it was what I had.

Ingredients

4 1/2 waffles
  1. 2 cupsmashed potatoes
  2. 1 cupshredded cheese of your choice
  3. 1/4 cupflour
  4. 1egg
  5. 1/2 tspbaking powder
  6. 1/4 tspbaking soda
  7. 1spring onion
  8. paprika

Cooking Instructions

    Put all your ingredients in a bowl and mix

    Once your waffle maker is hot and ready, put an amount of your batter. It's not liquid so you will have to spread it a bit, but it will spread also on its own once you close the lid. My waffle maker goes up to 6, I set it at 5 and left the waffles until I saw the green light.

    Continue with the rest of the batter. I ended up with 4 1/2 waffles and had them for a hearty breakfast with cherry tomatoes and extra cheese.

I live in Greece but I love to try and experiment with food from all over the world! I have 2 children that are grown up now and off to the University, but I consider it my great success that they both love to try new things, they can cook and actually love to do it!
