Marinate chicken in a large bowl and leave for a few hours at least (longer the better)

Shred the cucumber, squeeze out liquid then combine the tzaziki ingredients and leave in fridge. You can also prep whatever salad you want

On a tray, skewer the onion vertically and add the chicken to the skewers, rotating each piece 90 degrees

Bake for 1.5/2 hours

Carve the chicken, you can place under a grill to crisp up if you want

I served on a flatbread coated with tzaziki with fries, salad etc
