Ingredients

5_6 servings
  1. 5_6 magaz
  2. 1big Onions chopped
  3. 1big spoon ginger garlic paste
  4. 2Tomatoes
  5. 1 tsplemon juice
  6. 5_6 Green chillies chopped
  7. 2 tbspdhania chopped fine
  8. Masalay:
  9. 1 tsphaldi for boiling magaz
  10. 1 tspred chilli powder
  11. 1 tsphaldi powder
  12. 1 tspsalt or according to taste
  13. 1_1 /2 tsp zeera powder
  14. 1 tspwhite zeera sabut
  15. 1 tspgaram masala powder
  16. 1 tbspqasuri methi crushed

Cooking Instructions

    Cut all vegetables, wash brain very carefully, it's delicate.

    I parboiled brains, boil water with little haldi, when boil comes add the washed magaz, let boil for 2_3mins until colour changes to white. Don't over boil.

    Now with a spoon take out carefully and keep aside

    Heat oil add onions and fry add zeera when onions gets soft n start changing colour add ginger garlic paste and fry, add haldi, salt n red chilli powder cook add little water.

    Add chopped tomatoes mix and cook low flame and cover lid, cook till tomatoes are soft and mash them, if required add little water.

    Add few chopped green chillies and Dhania. Fry masala well.

    Now add boiled magaz in masala add splashes of warm water from sides, sprinkle zeera powder. Cook.

    Don't stirr with spoon just shake the pan, when it's cooked from one side than gently turn sides and break it in big pieces.
    Now add garam masala, more zeera powder, bhun lein achi tarha than add,qasuri methi, green chillies and dhania n put on dum for few mins. It's ready sprinkle lemon drops. I kept it motay pieces of magaz. It's so delicious. You can break more n make like qeema. Do try and give me feedback.

    Serve with naan or chapatti.
