Cooking Instructions

Wash and boil the lentils in plenty of fresh water for 15 minutes and drain them.

Heat the olive oil and add the onion and cook until shiny. Add the garlic and the carrot and cook for a while. Add the lentils and give it a stir.

Add hot water, the tomato sauce and the spices and bring to a boil. Simmer until the lentils are thoroughly cooked. Season with salt and cook until the soup thickens.

Serve with a drizzle of olive oil, bread and a chunk of feta cheese.
