Ingredients

20 minutes
4 servings
  1. 1 cupall-purpose flour / maida
  2. 1/2 cupyoghurt
  3. 1/4 tspsalt
  4. as required Water to make a thick batter
  5. 1/2 tspbaking soda
  6. For the Sugar Syrup
  7. 2 cupssugar
  8. 1 cupwater
  9. 1/2 tsplemon juice
  10. A fewstrands of saffron
  11. as required Ghee for frying

Cooking Instructions

20 minutes
  1. 1

Mix all the ingredients listed under 'for the jalebi batter', except baking soda, to make a thick batter – consistency slightly thicker than pancake / dosa batter. Keep aside for 5-10 minutes.

  2. 2

While the batter is resting, prepare the sugar syrup. Boil the sugar & water for a couple of minutes.

  3. 3

Add lemon juice to the sugar syrup. This will give you clear syrup and add the required tartness to the jalebis, for that fermented batter flavour.

  4. 4

Boil the sugar syrup till it reaches 1 thread consistency (ek taar). Keep aside and cool slightly – we need a moderately warm sugar syrup to dip the jalebis in.

  5. 5

Add saffron strands to the sugar syrup, while its kept aside for cooling.

  6. 6

Once you’re ready to fry the jalebis, start heating enough ghee (to cover approx. 1 inch of the pan) in a shallow frying pan on medium low flame – I prefer a flat bottom frying pan.

  7. 7

Add baking soda to the batter, mix well and pour the batter in to a piping bag or a squeezy bottle. Start piping round jalebis and cross the circle so the jalebis hold shape.

  8. 8

Fry on medium flame till very slightly coloured – approx. 1-2 minutes and immediately dip the jalebis in the sugar syrup for around 15 seconds.

  9. 9

Let the excess sugar syrup drip and place the jalebis on a plate to cool or serve warm.

  10. 10

Serve these delicious instant jalebis as is or with milk or yoghurt – the way you like it!

At WhiskMixStir, I share a lot of simple everyday Indian cooking recipes for those of us who are just starting out on our cooking journey... or for the ones looking for quick under 20 minutes recipes and Indian meal ideas possibly after a long day at work. Everyone at some point or the other is new to cooking, as am I, so I blog my recipes to document them and also help fellow learners along the way. Most of my recipes are from the Northern Indian region and I do not claim any authenticity of these being traditional recipes, as recipes and ingredients do change from generation to generation. This is simple North Indian / Punjabi food that is cooked in my house and that I have grown up eating.Because I enjoy cooking so much, I thought it was only apt to document and share my passion… which is how the food / recipe blog WhiskMixStir came about.I hope you enjoy reading and more importantly trying out my recipes and meal ideas… do write in to me with your feedback!Best,Sheetal Jandial@WhiskMixStir
