My Norway trip pancakes

In 2019 we did a road trip from Stockholm to Bergen. In one of our stops we stayed in a small house that had a kitchen and right outside there were blueberry bushes, filled with fruits!
For me this was a unique experience, since we don't have blueberries in Greece (at least not in the southern part where I live). So I went outside and did some foraging and then made these pancakes with things we had in the small kitchen.

Cooking Instructions

Mix all dry ingredients. Mix liquids, add them to the dry ingredients and mix again.

This is the milk I had. It was a bit like very runny yoghurt (so I think you could substitute with yoghurt with no problem). The end result was a fluffy dough, like thick yoghurt maybe.

Add the blueberries and mix again

Spread some oil or butter in your pan and add spoonfulls of the dough (in medium heat). When they thicken and start to bubble, turn them, so that they cook on the other side as well. Just a minute will do.

Serve with some butter and syrop (or honey)
