usually when I make fish soup, I use some alcohol or ginger to remove unwanted fishy element. Recently I discovered that martini vermouth does the job very well. You can think of it as a replacement to sake and mirin together. It also adds to the sweetness to the soup, which makes
the soup really tasty.

Cooking Instructions

Slice onion and fry together with sliced garlic and ginger in a pot until onion turn transparent.

Add sea bass (roughly cut to smaller pieces) to the pot. Add water until almost covering all ingredients.

Add 3 caps of martini to boil. Cook for about 15-25 minutes. Depends on how tender you’d like the sea bass.

Serve. We ate up everything before I had a chance for a nice photo…so here we go! 🥣

Normally, Miso soup are just tofu & wakame, but the possibility are endless when it comes to miso soup. You can add your favorite ingredients such as potato, carrot, daikon or clams. I don't use miso with dashi, so I've always made miso soup this way.The reason for turning the heat off at Step 2 is to prevent the ingredients in the soup from becoming over-cooked, which would make the soup too rich.The sake dissipates while cooking, so it's fine to serve this soup to children.If you are using miso with dashi already mixed in, you can omit the dashi granules.Adjust the amount of miso to your taste, but I recommend adding a little more than you're used to!
