As it is beginning of summer with holi coming in next week and fresh roses blooming in the garden, I thought why not celebrate Women's Day with fresh Rose Thandai. Why just gift Women a Rose, why not take the benefit of fresh roses grown in the garden without any pesticide. So I decided to treat myself and my little daughter with fresh and flavourful Rose Thandai on the occasion of Women's Day.

Rose Thandai is a special healthy drink made for festival of Holi. Thandai refers to chilled, flavoured milk made during summers. It is made in different flavours, Rose being one of them.

Thandai can be made with store bought powder or made at home with base paste. Ingredients for instant powder and paste are same, except for soaking in 2nd method. Nuts, seeds and spices are soaked and grinded to a fine paste along with rose petals. It is then sieved and mixed with milk and sugar. Fresh rose petals can be replaced with dried rose petals or gulkand(adjust sugar accordingly).

Rose Thandai is best served chilled for holi gathering or as a summer drink.

Ingredients

  1. 3fresh rose petals
  2. 3 tbspcashews
  3. 3 tbspbadam
  4. 2 tbsppista
  5. 1 tbspraisins
  6. 1 tbspmelon seeds
  7. 1 tbsppumpkin seeds
  8. 1 tbsppoppy seeds
  9. 1 tspfennel seeds
  10. 5cardamom seeds
  11. 1/2 tsppeppercons
  12. 1cinnamon stick
  13. strandsFew kesar
  14. 2 cupschilled milk
  15. 5-6 tbspsugar

Cooking Instructions

    Soak almonds and pista in a bowl for 4-6 hours. Clean the rose petals with water and take it in a bowl along with other ingredients except milk and sugar. Let it soak for 4-6 hours.

    Peel the skin of badam and pista and add it to the bowl with rose mixture. Transfer the rose mixture to mixer jar and grind to smooth paste. Add milk if required to grind.

    Sieve the paste to a bowl. Take the remaining residue and grind again with milk and strain it.

    To the smooth puree add remaining milk and sugar. Milk and sugar can be adjusted as per taste. Stir until sugar dissolves.

    Pour into glass and Chilled Rose Thandai is ready to be served.
