Emeril Lagasse basic tomato sauce

Ingredients

  1. 1 tablespoonolive oil
  2. 3/4 cupchopped yellow onion
  3. 1 teaspoonminced garlic
  4. 1/4 teaspoonsalt
  5. 1/4 teaspoondried basil
  6. 1/4 teaspoondried oregano
  7. 1/8 teaspoonground black pepper
  8. 1 (28 ounce)can whole peeled tomatoes (diced), and their juice
  9. 1 (15 ounce)can tomato sauce
  10. 4 teaspoonstomato paste
  11. 1 cupchicken stock or waters
  12. 1/2 teaspoonsugar

    Heat olive oil in a medium pot over medium heat.

    Add onions, garlic, salt, basil, oregano and black pepper

  3. 3

    Cook until soft (4 minutes)

  4. 4

    Add tomatoes and their juices, the tomato paste, water, and sugar and stir well.

  5. 5

    Bring to a boil, lower heat to medium low and simmer uncovered until thick and fragrant. About 30 minutes stirring occasionally
