Ingredients

  1. 500gm. baby brinjals /baingan / eggplant/vangi
  2. 1/2 cuppeanuts
  3. 2 tsp sesame seeds
  4. 1 cupdecicated coconut
  5. 4-5garlic cloves
  6. 1/2 inchchhoped ginger
  7. 1large onion chhoped
  8. 1tomato chopped
  9. 1/2 tsp turmeric powder
  10. 1 tsp goda masala (Maharashtrian special masala)
  11. 1/2 tsp red chilli powder
  12. 1/4 tsp garam masala powder
  13. 1/2 tsp dry Coriander powder
  14. 1/2 tsp cumin seeds powder
  15. 1 pinchassofodeta
  16. 3-4 tsp oil
  17. 2 cupwater /as needed
  18. as per tasteSalt
  19. as requiredgreen coriander leaves chopped

Cooking Instructions

    Wash brinjals slit them into 4 without breaking soak in salted water Get ready all ingredients

    Dryroast peanuts first add decicated coconut sesame seeds roast till brown. Cool down all. Add in grinding jar add 1/2 onion chopped ginger garlic green coriander leaves grind smooth paste

    With adding little water. To ground masala add all dry masala powder stuffed brinjals with this masala.

    In pan heat oil add 1/2 chhoped onion saute add tometoes chopped saute till they become soft add remaining mix masala stir and saute add water depends on contency of gravy you want add stuffed brinjals

    Cover cook completely don't stir again again remove lid check fully cooked brinjals are ready. Then serve hot.

    Serve with chapati rice slice
