Ingredients

6 hours crock
8-12 servings
  1. 2relatively small yellow onions, rough chop
  2. 2relatively large Mild Jalapenos, deseeded and rough chop
  3. 3large cloves of Garlic, pressed
  4. 2large boneless, skinless, chicken breasts. A pound and more
  5. 1 (28 oz.)can of Old El Paso "Mild" Red Enchilada Sauce
  6. 1 (10 oz.)can of Old El Paso "Medium" Red Enchilada Sauce
  7. 1 candrained black beans
  8. 1 candrained sweet corn niblets
  9. 1very small can of Old El Paso green chiles
  10. 1 bagfine shred "4 cheese" Mexican Blend Cheese
  11. 1 bagcorn tortillas (18), cut in strips

Cooking Instructions

6 hours crock
  1. 1

    Place the Chicken Breasts in the bottom of your crockpot.

  2. 2

    Add in the onions, garlic, jalapenos.

  3. 3

    Dump and go... the Enchilada sauce, green Chiles, beans, and corn. Let go on 'High' Crockpot setting Four and a Half Hours.

    Remove and shred the slow cooked chicken, add back.

  5. 5

    Add the stripped corn tortillas and half the bag of cheese. Mix well.

  6. 6

    Cover the top of the crock with the remaining half of the cheese, cover, and let go for another hour and a half. 6 hours total, enjoy...
