Ingredients

1 hour 20 plus resting time
4-6 servings
  1. 1.5 kgsilverside beef
  2. 1 tbspDijon mustard
  3. 1 tbspwhole grain mustard
  4. 1onion
  5. 4dessert spn capers
  6. 3anchovies
  7. 1shallot
  8. 1garlic clove
  9. 1 bunchbasil
  10. 4 tbspolive oil
  11. 1 tbspred wine vinegar
  12. 1dessert spoon Dijon mustard
  13. 1 bagrocket

Cooking Instructions

1 hour 20 plus resting time

    Preheat the oven to 200c fan. Remove the beef from the fridge 30 mins before cooking. Mix the mustards together, season the beef then coat with the mustard. Peel and cut the onion into thick slices. Place on a baking tray top with the beef and place in the oven for 20 mins

    Reduce the heat to 160c fan and cook for 1 hour. Baste after 30 minutes

    Remove from the oven and rest under loose foil

    To make the dressing add all the ingredients to a blender and pulse to ensure you have a slightly chunky texture

  5. 5

    Thinly slice the beef, add to a serving plate with the rocket, season, dress and serve with roasted new potatoes
