Spaghetti aglio e olio e peperoncino

Ingredients

  1. 5 ClovesGarlic chopped
  2. 6 TbspOlive Oil
  3. 1 TbspChopped Parsley
  4. 1 PinchChilli Flakes
  5. 300 GramsSpaghetti
  6. Parmigiano Reggiano

Cooking Instructions

    First, cook the pasta. Bring a large pot of salted water to a boil and cook the pasta until al dente. Reserve some of the starchy pasta water before you drain it!

    Meanwhile, heat the olive oil over medium heat in a large pan. Add the garlic and cook until it just begins to turn golden on the edges-don't overcook it! Add the red pepper flakes and cook for 30 seconds more.

    Once the pasta is ready to go, use tongs to transfer the pasta to the pan, along with 1/2 cup of the pasta water. Toss the pasta continuously until it is evenly coated.

    Serve dish topped with the Parmigiano-Reggiano cheese and parsley.
