Maldivian tuna curry 🐟 🥥

A very easy and mild curry dish for the whole family to enjoy. I use all green veggies I have leftover. It is very simple and quick as the tuna only requires simmering a few minutes at the very end prior to serving. Unlike meat alternatives that needs to stew for longer to soften, tuna is more tender the less you cook it. It is also safe to eat when slightly pink inside.

I created this recipe on a lazy fridge cleanout day when most of the ingredients I had left just made sense for a Thai-inspired curry.On the day I took this particular pic, I had Chinese eggplant, red bell pepper, and zucchini on hand, but you can use 2 to 3 cups of whatever chopped veg you like. I was looking for something different to do with a roast I had in the freezer and this didn't disappoint. I borrowed a technique from Kenji Lopez-Alt in caramelizing the onions. Adding the water allows the Maillard reactions (responsible for browning) evenly and without burning the onions, resulting in sweet, savory onions.
