They can also be chargrilled in an open fire but I did these in a regular oven grill. These sweet juicy leeks paired incredibly well with @kanaaneko romesco sauce

    Leeks are cooked whole and are kept as much intact as possible. Trim the top green parts of the leek and slightly split to get your fingers in and clean out any dirt. Hold under running water and clean these. Leave the root end in place. Place in a baking tray and place under a very hot Grill. Turn the leeks every so often under they are completely charred black all over the outer layer and soft. No need to season or use oil, the leeks natural juices do all the work.

    Remove from under the grill and immediately cover with clingfilm to allow the inside heat to continue to steam and cook the leeks from the middle. When ready to serve slice open. These sweet juicy leeks paired incredibly well with @kanaaneko romesco sauce
