Today, I'm sharing how to grill the meat using a ridged grill pan for those who don't have a charcoal grill or oven but still want to make this delicious dish at home. Mix the ground beef and ground pork together. Season with 1/5 tsp black pepper, 1 tsp minced lemongrass, minced garlic and chili, 1 tsp soy sauce, 1 tsp oyster sauce, 1 tsp cooking oil, 1 tbsp palm sugar, 1 tsp cornstarch, and 1/4 tsp five-spice powder. Marinate for at least 30 minutes to let the flavors absorb. Shape into flat patties about 1 1/2 inches (4 cm) in diameter.

To make the pickled vegetables: Julienne the daikon and carrot, add 2 tbsp granulated sugar, and mix for 20 minutes until they release water. Squeeze out the liquid, then add 1 tbsp distilled white vinegar and a pinch of salt. Mix well to pickle.

Brush a ridged nonstick grill pan with oil. Once hot, grill the meat patties on both sides until golden and slightly charred. Remove to a plate. Save the pan drippings to use in the sauce.

For the sauce, combine the pan drippings, sweet soy sauce, ketchup, oyster sauce, sugar, peanut butter, chili flakes, and fried garlic. The pickled veggies add tang, so no need for extra vinegar. Adjust the sauce to taste, balancing sweet and savory.

Slice the baguettes lengthwise. Add a few lettuce leaves, some grilled meat patties, a bit of pickled veggies, fresh herbs, a few sprigs of cilantro, and drizzle with sauce and chili sauce. Serve hot for the best flavor.
