Ingredients

  1. For Chole -
  2. 2 cupchikpeas
  3. 1 tspcumin seeds
  4. 2onions sliced
  5. 1 tbsp ginger minced
  6. 1/4 cuptomato puree
  7. 3 tbsponion paste
  8. as per tasteSalt
  9. 5 clovesgarlic
  10. 1 tspgaram masala powder
  11. 1/2 tspturmeric powder
  12. 1 tspred chilli powder
  13. 1/2 tspdry mango powder
  14. 11/2 tbspchole masala powder
  15. as requiredgreen coriander leaves chopped
  16. For Bhature -
  17. 1 cupall-purpose flour /maida
  18. as per tasteSalt
  19. 1/4 tbsp whole wheat flour
  20. as requiredOil for deep frying
  21. as requiredSoda water for kneading

Cooking Instructions

    For chole -
    Clean wash and soak chickpeas in water for overnight cover keep aside. Next day heat up oil in presser cooker add chikpeas salt cook make 4-5 whistles cook chikpeas cooked completely. Then drain reserve boiling chicpeas water for gravy.

    Meanwhile heat up oil in pan add cumin seeds when they crackers add sliced onions saute till golden brown add minced garlic ginger saute add tomato puree mix well and cook then add all dry spices powder mix until oil seprate add boiled chickpeas mix well add salt add reserve water adjust countency of gravy boil add green coriander leaves

    For Bhature -
    In mixing bowl add all-purpose flour add wheat flour salt mix well using soda water knehd soft pliable dough.

    Now take a kitchen napkin cover dough and allow to rise it.

    Cover lid for sometime. Then check the dough make eqal size balls from dough

    Roll out little thick puris from balls keep aside. Heat up oil in pan drop bhatura carefully and deep fry do not fry until brown drain oil transfer to plate. Make all bhaturas.

    Serve hot bhatura with chole
