Ingredients

  1. For Green Chill paste
  2. 1/2 inchGinger, peeled, slice
  3. 2Green chilies (less spicy & cut into half)
  4. as per taste Salt
  5. For Masala Pulao
  6. 2 tbspGhee
  7. 1 tbspOil
  8. 5-6Black peppercorns
  9. 1Black cardamom
  10. InchCinnamon stick
  11. 1Bay leaf
  12. 1/2 tspCumin seeds
  13. 4medium Onion, sliced
  14. as requiredPrepared Ginger Green chili paste
  15. 2medium Potato, peeled, cut into sliced
  16. 2medium Carrot, peeled, cut into Sliced
  17. 1medium Cauliflower, cut into florets
  18. 1/2 cupCurd, beaten
  19. 1/2 tspTurmeric powder
  20. 1 tspred chili powder
  21. 1 tspCoriander powder
  22. as requiredSalt to taste
  23. 6-7Cashewnut
  24. 1 1/2 tspkewra water
  25. 2 cupsWater
  26. 6-7French beans, chopped
  27. 1/2 cupfresh Green peas
  28. 3 cupSella basmati rice (soaked for 20 minutes)
  29. as requiredWater
  30. For Tadka :-
  31. 1 tbspGhee
  32. 1Green chili, slit
  33. 1medium Tomato, dice
  34. 5-6Cashewnut, halves,
  35. 1 pinchred chili powder
  36. as per tasteSalt
  37. somechopped Coriander Sprig

Cooking Instructions

    For Ginger Green Chili Paste
    In a mortar pestle, add ginger green chili, salt to taste and make a parse paste Keep it aside for further use..

    For Masala Pulao:-

    In a handi, add oil, ghee, once it's hot, add black peppercorns, black cardamom, cinnamon stick, bay leaf, cumin seeds and let it splutter well. Add onions and saute it until light golden brown in color.

    Add prepared ginger green chili paste and saute it for 1-2 minutes on moderate heat.

    Add potatoes, carrots, cauliflower and saute for a while.

    Add curd, turmeric powder, degi red chili powder, coriander powder and saute for a few minutes.

    Add salt to taste, cashewnut, kewra water and mix well.

    Add water, salt to taste, french beans, green peas and mix it well. Now, add sella basmati rice, water and mix.

    Cover it with the lid and cook on moderate heat for at least 15-20 minutes.

    Once the rice gets cooked well, turn off the flame and keep it aside for resting. Transfer it into a serving dish with prepared raitas and garnish it with prepared tadka and coriander sprig.

    For Tadka
    In a shallow pan, add ghee, once it's hot, add green chili, tomato,
    cashewnut and saute it on moderate
    flame.

    Add red chili powder, salt to taste and mix well.

    Pour the tadka on top of the masala pulao...

    Ready to serve 😋 yummy and tasty masala pulao.
