Ingredients

  1. 4medium chopped tomatoes (I used on the vine)
  2. 1 3/4 cupcanned diced tomatoes
  3. 1/2 cupfresh chopped basil
  4. 1medium onion, chopped
  5. 2medium cloves of garlic, minced
  6. 2 tbspolive oil
  7. 1/2 tspItaliano seasoning
  8. Salt & pepper to taste
  9. 2 cupschicken broth (or vegetable broth)
  10. 1chicken (or vegetable) broth cube

Cooking Instructions

    In a medium sized pot heat olive oil and add onions and garlic. Cook until tender

    Add to the pot all veggies and seasoning. Cook on medium heat until tomatoes are very tender.

    Add to the pot broth and broth cube. Bring to boil, then reduce heat and cook for about 7-8 minutes.

    Let soup sit for a few minutes, then blend it to a preferred consistency. Done.
