Ingredients

  1. as neededGarlic salt,
  2. as neededOnion powder,
  3. 6Small fish, gutted and cleaned
  4. Cooking oil

    I used Twinstripe Fusilier (round ‘Dalagang Bukid’) fish, quite easy to clean and it’s pin bones can get crunchy after frying so you can eat it too.

    Season well with garlic salt and onion powder.

    Tip: oil in pan needs to be really hot before you put it in. (Medium heat)
    And a non-stick pan does not work, use the metal stuff.

    Caution: Ready your pan cover, as it will splash, especially if the fish is wet.

    Better option- is to use AF so no hot oil splashes hehe (see my AF recipe for a bigger fish, just lessen cooking time)

    Leave it be in hot oil until you can see the edges browning, then you can flip.

    Caution: hot oil splashes

    Tip: lower heat when doing this. Or remove the pan from heat for a moment.

    Once browned (not burnt) and looking crunchy, remove from heat and serve with dipping sauce of soy and kalamansi/lemon OR soy sauce and vinegar with sliced chilies.
