Ingredients

  1. 1 medium sized Brinjal
  2. 1/2 bowlGreen peas
  3. 2 tspGinger garlic paste
  4. 3 tspoil
  5. 2Chopped onions
  6. 1 cupSoyabean chunks and granules
  7. 1 bowlCurd
  8. pinchAsafoetida
  9. 1/2 tspCumin seeds
  10. As per tasteRed chilli Powder
  11. As Per TasteSalt
  12. 1/2 tspGaram masala powder
  13. 1 tspTurmeric Powder
  14. 2 TspGrated mozzarella cheese
  15. 1/2 BowlGreen Coriander Leaves
  16. 1 medium tomato sliced

Cooking Instructions

    Take Brinjal cuts in two equal halves.make cuts.now longitudinally and diagonally. Take a Pan add 2 tsp of oil & roast brinjals on both sides cover with the lid. Now let it cool and scrap out the pulp leaving the sides. Remove the seeds and take out the rest pulp and keep aside.

    Take Soyabean Soaked in Water for an hour then squeeze the water. Take a pan add 1 tbsp of oil,add Asafoetida & Cumin seeds. then add chopped onion and roast well.

    Now add the fried brinjal pulp and cook for 5 min cover with the lid. Add Soyabean and mix all Spices like garam masala powder, turmeric powder, salt, red chilli powder and mix well.

    Add curd after beating well and then cook till the mixture becomes well cooked.

    Add chopped coriander leaves. Now remove half of the stuffing for the eggplant boats. To the rest mixture add 1 cup water and make a gravy.

    Fill the Brinjals with the stuffing. Add on top tomato slices and mozzarella cheese.

    Bake at the grill setting of the oven at 200 degrees until they are browned. Now in a serving plate add spoonful of soya curry and place one eggplant boat.Sprinkle some freshly chopped coriander leaves. Serve with Rotis & enjoy.
