Drumstick, Eggplant, and Lentil Dumpling Curry

Drumsticks (known as Moringa in our region) are commonly used here. This curry is made by combining them with eggplant, radish dumplings, or lentil dumplings, resulting in a very delicious dish.

Cooking Instructions

First, wash and cut the potatoes and eggplants. Peel and cut the drumsticks into 3-inch pieces. Finely chop the onions and green chilies. Make a paste of ginger and garlic.

Heat oil in a pan and fry the drumsticks and dumplings until golden, then remove them. In the same pan, heat oil and add cumin seeds, mustard seeds, and curry leaves. Add onions and green chilies and sauté for a minute, then add the ginger-garlic paste and sauté. Add tomatoes and cook. Add all the dry spices and sauté.

Once well sautéed, add the dumplings, drumsticks, potatoes, and eggplants. Add salt, cover, and cook for 6-7 minutes.

Stir occasionally with a spoon. After 7 minutes, add water and mix.

Now add Maggi Magic Masala, mix, and let it cook for 3-4 minutes. Add cilantro, mix, and turn off the heat.

Transfer to a large serving dish.
