Ingredients

  1. 1 cupflour
  2. 1/2 cupcornmeal
  3. 1 cupshredded zucchini
  4. 1 tspsalt
  5. 1 cupsugar
  6. 2eggs
  7. 1/2 cupvegetable oil
  8. 1 tspvanilla extract
  9. 1 tspbaking soda
  10. 1 tspbaking powder
  11. Optional: For a sweeter bread use1 1/2 cup flour and eliminate the 1/2 cup of cornmeal, then add 1 teaspoon of cinnamon & 1/2 cup of walnuts to your dry ingredients
  12. 1egg wash, Himalayan salt, and butter for the top of the bread

Cooking Instructions

    Mix together sugar, eggs, oil & vanilla extract. Add dry ingredients & zucchini.

    Bake on 350 for 1 hour.
    Remove from oven. Add salted butter on top and let cool. enjoy!

    * Cover with foil toward the end, if top is browning too quickly.

    *An egg wash & a sprinkle of Himalayan salt can be added to the top halfway into baking the bread.
