Indian pickle can be a very delicious and important side dish as it takes the whole meal to the next level. Usually we make spicy pickles from mangoes. This sweet and sour mango pickle is called Vaghariyu in Gujarati language and it is very famous and popular amongst all the gujaratis who enjoy eating this pickle with thepla, handvo, muthiya or with their regular meals. This pickle is similar to aam ki launji. Vaghariyu can be prepared with sugar as well as jaggery. I like the taste of jaggery and it makes it healthier too. This is a very delicious pickle which is sweet, tangy and spicy. It can be stored in the refrigerator for a few months.

Ingredients

  1. 500 gramraw mango
  2. 1/4 cuppeanut oil
  3. 1/2 tspmustard seeds
  4. 1/2 tspcumin seeds
  5. 2no small cinnamon stick
  6. 3-4no cloves
  7. 8-10no black pepper corns
  8. 1no dry red chilli
  9. 1no bay leaf
  10. 1/2 tspasafoetida
  11. 1/2 tspturmeric powder
  12. Salt as per taste
  13. 400 gramchopped jaggery
  14. 1 tbspkashmiri red chilli powder
  15. 1 tbspcoriander cumin powder
  16. 2 tbsppickle spice / Achar masala

Cooking Instructions

    First of all wash and peel mangoes. Chop them into medium size pieces.

    Heat oil in a pan, add mustard seeds, when the mustard seeds splutters a little, add cumin seeds to it. When the cumin seeds are hot, add cinnamon pieces, cloves, black peppercorns, dry red chillies and bay leaves and saute it.

    After that add asafoetida and turmeric powder and mix well and add mango pieces to it and mix well.

    Now add salt to this according to taste and mix gently and saute for 1 minute cover the lid and cook the mangoes 70% for 5 minutes on medium gas flame.

    After that, add the chopped jaggery to this and mix well. Cook on medium flame till the jaggery melts. Cook the pickle until it reaches
    one-string consistency. Take little bit of syrup between two finger tips to check if it has reached one-string consistency. Turn off the heat and let the pickle cool down.

    Then add Kashmiri red chilli powder, coriander cumin powder and pickle spice and mix well. So that the pickle gets a nice red color. Now fill it in a clean and sterilized glass jar. This pickle can be stored in the fridge for a few months.

    Now Our sweet & sour Raw Mango Vaghariyu is ready for serving. You can serve vaghariyu with a meal or even with paratha, thepla, muthiya, handvo etc.
