Meatloaf, wheat-free with Lentils

Ingredients

  1. Meatloaf
  2. 195 mlLentils
  3. 390 mlWater
  4. 800 gground Beef
  5. 1Onion, peeled and diced
  6. 2large Eggs
  7. 4Garlic cloves, peeled and chopped
  8. 45 mlTomato sauce
  9. 45 mlfresh Parsley, chopped
  10. 10 mlKosher Salt
  11. 5 mlfreshly ground Black Pepper
  12. 10 mlItalian Herbs
  13. 5 mlPaprika
  14. Tangy Sauce
  15. 180 mlTomato sauce
  16. 15 mlBalsamic Vinegar
  17. 40 mlSugar
  18. 5 mlGarlic powder
  19. 5 mlOnion powder
  20. PinchKosher Salt

Cooking Instructions

    Boil Lentils in Water till almost cooked, adding more Water as needed. Remove from heat and drain.

    Preheat oven to 190°C and line a 28cm x 10cm loaf pan with wax paper and spray with non-stick oil.

    Combine the Lentils with the remaining Meatloaf ingredients and mix well.

    Place Meatloaf in the loaf pan and spread evenly. Bake for 40 minutes at 190°C.

    Combine the Sauce ingredients and set aside.

    Remove the Meatloaf from the oven and cover with the Sauce. Return to oven and bake for another 15 to 20 minutes at 70°C.

    Remove Meatloaf from oven and rest for 10 minutes. Remove the Meatloaf from the pan and slice, drizzle with juices from the pan.
