Meatloaf, wheat-free with Lentils

Cooking Instructions

Boil Lentils in Water till almost cooked, adding more Water as needed. Remove from heat and drain.

Preheat oven to 190°C and line a 28cm x 10cm loaf pan with wax paper and spray with non-stick oil.

Combine the Lentils with the remaining Meatloaf ingredients and mix well.

Place Meatloaf in the loaf pan and spread evenly. Bake for 40 minutes at 190°C.

Combine the Sauce ingredients and set aside.
- 6
Remove the Meatloaf from the oven and cover with the Sauce. Return to oven and bake for another 15 to 20 minutes at 70°C.

Remove Meatloaf from oven and rest for 10 minutes. Remove the Meatloaf from the pan and slice, drizzle with juices from the pan.

Two different types of Meatloaf for several different taste buds of a family. Low carb for both of these. I love meatloaf sandwiches with bread. So I took a little mayonnaise add to some of the Meatloaf to give me most of the taste, it was so very good!!! skunkmonkey101 -
