In my state the cultivated paddy straw mushroom is very popular and especially done by Ladies from villages. Mushroom is an edible fungus and is high in protein content.

To make curry with straw mushroom with mustard paste and dry mango pieces(ambula in Odisha) is very popular in Odisha. I have prepared the same recipe and presented it here. It's very delicious. This recipe is known as 'Chhatu Besara' in Odisha.

Ingredients

  1. 250 gmushrooms
  2. 3small boiled potatoes
  3. 1red onion chopped
  4. 1 Tbsp.chopped garlic
  5. 3green chillies
  6. 1tomato chopped
  7. 2 Tbsp.mustard seeds paste
  8. 1.5 Tbsp.mustard oil,1/2 Tsp ponch phutan
  9. 1/3 Tbsp.turmeric powder
  10. salt as required
  11. 1dry mango pieces
  12. leavesgreen coriander

Cooking Instructions

20 minutes

    Arrange and assemble the ingredients. Clean, wash and chop the mushrooms. Heat mustard oil and allow to crackle ponch phutan after adding to hot oil.

    Then add chopped onion, garlic and green chilli. Saute till aromatic and soft. Mix chopped tomatoes, turmeric powder and salt. Keep frying on low heat.

    Now add chopped mushroom, boiled and chopped potatoes and mix nicely with masala.

    Then add mustard seeds paste and the required amount of water. Cook the mushrooms after adding the dry mango pieces. Cook covered for 2 minutes. Garnish with fresh chopped green coriander leaves and serve with steamed rice.
