Shakshuka is a middle eastern dish of eggs poached in a spicy tomato sauce. This one uses canned tomatoes and spicy flavours my 5 men love. (I don't measure when I cook, so amounts are approximations.)

Ingredients

30-40 minutes

  1. 1yellow onion chopped
  2. 1 Tbspminced garlic or 2 garlic cloves crushed
  3. 2 tspdried basil
  4. 1/3 tspchili powder
  5. 1/3 tspdried peperoncini
  6. 1/2 TbspKinder's Red Jalapeño Garlic Seasoning
  7. 28 ozcan crushed tomatoes
  8. 14.5 ozcan diced tomatoes (with basil or fire roasted)
  9. 10 ozcan diced tomatoes wit green chilies
  10. 4Bay leaves
  11. 12eggs
  12. Olive oil
  13. Salt and pepper to taste
  14. 2fresh baguettes heated and cut in thirds
  15. Grated cheese (optional)

Cooking Instructions

30-40 minutes

    Preheat oven to 375ᵒ.

    Heat a 14" (5.5 qt.) deep sauté pan over medium-low heat. Add enough oil to coat bottom and sauté onions until translucent and starting to brown (7-10 minutes).

    Add in garlic and all spices and cook another 2 minutes.

    Pour in cans of tomatoes, add bay leaves, turn up heat to medium-high and cook until mixture starts to bubble, stirring occasionally (8-10 minutes).

    When mixture is bubbling, make a depression with the back of the spoon and carefully crack an egg into it. Repeat until all the eggs are in the pot. Cover, turn heat to medium-low, and poach eggs until desired doneness (10-15 minutes).

    While the eggs are cooking, brush the outside of the baguettes with water and put them in the oven for 5 minutes. Cut into thirds.

    Spoon 2 eggs and tomato mixture into bowls and top with grated cheese if desired. Serve with baguette.
