Ingredients

  1. 2lbs. Beef, London broil or sirloin roast
  2. 1large Onion
  3. 1couple Peppers, Cubanelle is best, Bell if thats what you got
  4. 2 canspetite diced Tomatoes
  5. 1large can/jar Tomato sauce
  6. 4-5Eggs
  7. 1 Tbsp.Italian seasoning
  8. 1 Tbsp.Paprika
  9. 1 tsp.Onion powder
  10. 1 tsp.Garlic powder
  11. 1 tsp.Ginger powder
  12. 1/2 tsp.Cumin
  13. 1/2 tsp.Turmeric
  14. Jalapeños * optional
  15. Mushrooms * optional
  16. Feta cheese * optional

Cooking Instructions

  1. 1

    Cube beef into 1 inch chunks

    I use London broil or a Sirloin roast, but use whatever beef you want, it all works

  2. 2

    Brown beef in skillet

    Drain off grease

  3. 3

    Dice onion, peppers, and mushrooms*

    add to skillet

    I use Cubanelle peppers and Jalapeños, use what you got or what you want

  4. 4

    Start to Pre heat oven to 350 if you want to finish it off in oven

    *At the end you can also just cover and continue letting it cook till done

    Drain cans of diced tomatoes and add to skillet

  6. 6

    Simmer for few minutes and then add tomato sauce

    * large family size can of condensed tomato soup works great also

  7. 7

    Add all seasonings

    Mix together

  8. 8

    Simmer for a while, little longer if it's thin

  9. 9

    Use a spoon to press in a spot, crack an egg into that spot

  10. 10

    When all eggs are cracked on top, let cook for a minute or two

  11. 11

    Put into oven and bake until egg whites are solid

    *add an extra minute or two if you want a harder cooked egg

    * If you don't want to use oven then cover until egg whites are solid

  12. 12

    Pull out of oven and top it with feta cheese if you'd like
