Ingredients

30 minutes
6 servings
  1. 2 TbspOlive oil
  2. 2 Tbspgreen curry paste
  3. 1medium onion chopped
  4. 1 clovegarlic finely diced
  5. 3Mahi Mahi filets (or any fresh caught fish) cut in chunks
  6. 2x 14 oz cans coconut milk
  7. 1 headbroccoli cut into florets
  8. 1green pepper sliced thin
  9. 1red pepper sliced thin
  10. 1 Tbspbrown sugar
  11. 1/2 ozcilantro roughly chopped
  12. 6 dropsfish sauce
  13. Salt and pepper to taste

Cooking Instructions

30 minutes

    Heat oil in deep sauté pan over medium heat. Add in curry paste and cook until smooth consistency, about 3 minutes.

    Add in onion and cook until translucent, 3-5 minutes.

    Add garlic and cook for one more minute.

  4. 4

    Add fish and cook another minute.

  5. 5

    Pour in both cans of coconut milk, add salt and pepper and cook until milk is heated through, stirring gently occasionally, 3-4 minutes.

    Add in broccoli and peppers and bring to boil.

  7. 7

    Stir in cilantro and brown sugar, cover and turn down to simmer until veggies are crisp tender.

    Turn off heat and add fish sauce, stirring gently until combined.

  9. 9

    Serve immediately.
