Cooking Instructions

Firstly, assemble all the ingredients required to make “Dahi Bhindi”. Wash and dry the okras well. Then cut away both the ends. If large, cut each into two. Finely chop the onions. Whisk the yogurt. Chop the coriander leaves.

Heat oil in a kadai on medium flame. Add the okra and fry until the okra changes colour. Remove in a bowl and set it aside.

In the same kadai, heat oil. Add cumin seeds, bay leaf, cardamom and kasuri methi and saute on low flame until it releases a good aroma.

Add the finely chopped onions and saute for a minute or two. Add the ginger garlic paste and saute until the onions turn slightly golden brown. Add the spice powders mentioned above and saute on low flame until it releases a good aroma.

Add the whisked yogurt and cook, stirring continuously, until the oil separates.

Add the fried okra and salt and mix it well. Adjust the consistency, as desired.

Cover and cook on low flame for 5 minutes.

Add 1/4 teaspoon kitchen king masala and the chopped coriander leaves. Once again mix it well.

Flavorful and Delicious Dahi Bhindi is ready. Serve it with roti, paratha, naan or rice.

Note to self: I absolutely love okra, it’s one of my favorite vegetables right after beets. There’s just something about cooking okra that reminds me of childhood. I remember my mom using leftover okra and making grilled stuffed sandwiches with them. Now this recipe is one of my mom’s and I’ve been sworn into secrecy about the spices used. (My family owns a Pakistani restaurant, Lazeez Asian Cuisine, and disclosing the spices aren’t an option as of yet). But I’ve found a way around it with the permission of my momma so you guys can enjoy the authentic taste of Pakistani cuisine! I’m in the process of trying to brand and sell individual spice mixes for these Pakistani dishes (in collaboration with Lazeez Asian Cuisine) and later on to other recipes as well.
