Ingredients

35-40 mins
4 servings
  1. 500 gmbhindi or ladyfingers
  2. As neededSmoked mustard oil for frying
  3. 1 tspcumin seeds
  4. 2bay leaf
  5. 1 stickcinnamon
  6. 4onions (ground)
  7. 7-8tomatoes
  8. 1 tbspginger garlic paste
  9. 2green chillies
  10. 3 tbspfresh curd
  11. 1 tspturmeric powder
  12. 1 tspred chilli powder
  13. 1 tbspcoriander powder
  14. 1 tspgaram masala
  15. 1/4 tsproasted cumin powder
  16. to tasteSalt
  17. As needed Cilantro for garnishing
  18. 1/2lemon
  19. 1/2 cupwater

Cooking Instructions

    Wash ladyfingers and then make them dry with a cotton cloth.

    Remove the upper and lower part. And then slit them like this.

    Cut all the ladyfingers like this and keep them in a bowl.

    Now sprinkle 1 tsp turmeric powder, some salt and squeeze half lemon on it. Mix all of these so that it spreads evenly.

    Cover it and keep it aside for 10 mins. Then start with the rest of the preparation.

    Grind onions and take them out in a jar. Then, grind tomatoes and green chilli.

    Firstly start with frying the ladyfingers. We will not deep fry them. We will shallow fry them like this.

    Fry rest all of them and take them out in a plate.

    Now in the same oil, put bay leaf, cinnamon stick and cumin seeds. Fry them until it leaves it's aroma.

    Add ground onions and ginger garlic paste to it. On full flame, keep stirring them and fry until golden brown.

    Once done, add all the spices. And give a nice stir.

    Now add the ground tomatoes paste. And keep stirring well on full flame. Till the oil separates and it's cooked then.

    Now add curd to it and keep stirring. It will look like this when cooked.

    Add some water to adjust the consistency of the gravy. And then add fried ladyfingers.

    Let it boil. And then cover for 10 mins.

    Now it's completely cooked and ready to be served! Garnish with cilantro leaves and enjoy it with your choice of bread!
