I made some adjustments to my previously shared recipe since this time l had access to authentic zitumbuwa flour (mgaiwa)
Cooking Instructions

Gather ingredients

Mash bananas and thoroughly whisk together with the sugar, milk, and egg

Whisk together the mgaiwa, baking powder, bicarbonate soda, and salt. Mix dry ingredients into the wet mixture to form a thick, dough-like batter that remains slightly soft and light for moulding and frying

Heat oil in a shallow pan until hot enough to sizzle when a wooden spoon is dipped in but not smoking

Wet your palms and scoop some batter on it, gently flatten it with your other hand to form fragile, wobbly batter balls in preferred sizes. Immediately place each disk into the oil to fry

Fry until golden on each side. Drain on papertowels and enjoy with some milk or lemon tea
