I had some overripe bananas that I didn't want to waste, so I decided to make a cake. I don't have standard measuring tools, so I used what I had on hand.

Cooking Instructions

Sift the flour, baking powder, baking soda, and salt into a bowl and set aside.

Mash the bananas coarsely with a fork, squeeze in the lemon juice, mix, and set aside.

Separate the egg whites and yolks. Beat the egg whites until stiff peaks form using a hand whisk. This step can be a bit tiring. Gradually add the sugar while beating.

Once the egg whites are stiff, add the egg yolks, mashed bananas, salt, and vegetable oil (I used rice bran oil). Mix the ingredients together.

Add the flour mixture as the final step.

Pour the mixture into the rice cooker. If you have a computerized rice cooker, it's very convenient—just press the cake button and wait. If using a regular rice cooker, you can still make it, but you'll need to check if it's done by using a toothpick. If it comes out clean, the cake is done. If not, cook it a bit longer.
