Ingredients

  1. 2 mediumegg whites
  2. 4 ozcaster sugar

Cooking Instructions

    Preheat the oven to 140C/275F/Gas Mark 1

    Grease a tray with greaseproof paper

  3. 3

    Whisk egg whites with electric whisk at top speed

  4. 4

    You know when its ready because you can tip the bowl over your head without the eggs sliding

  5. 5

    Pour in the sugar about a table-spoon at a time, and whisk

  6. 6

    Whisk in the sugar, but not at full speed

  7. 7

    When all the sugar is in give it a final whisk until its glossy and stands up in peaks

  8. 8

    Bake in the oven for 2 hours

  9. 9

    Take the meringues out the oven, and leave them for a few hours to dry out
