Ingredients

  1. 2 tbspRed wine vinegar
  2. 2 tspOlive oil
  3. 1 cloveGarlic
  4. 1 1/2 tspHot pepper sauce (tabasco)
  5. 1Fresh ground black pepper
  6. 1Ripe avocado
  7. 15 ozCan black beans
  8. 15 ozcan pinto beans
  9. 16 ozcan corn
  10. 2/3 cupsliced green onion
  11. 1/2 cupchopped fresh cilantro
  12. 1/2 lbRoma tomatoes, chopped salt to taste

Cooking Instructions

    In a large bowl, combine vinegar, oil, hot sauce and pepper.

    Peel pit and cut avocado into 1/2 inch cubes. Add to the vinegar mixture and toss lightly.

    Drain and rinse beans and corn. add beans, corn, onion, cilantro, and tomatoes.

    Mix gently to coat. Add salt and pepper to taste.

  5. 5

    Serve with tortilla chips. It is also great as a relish with grilled chicken or steak.
