Ingredients

  • 1small red onion
  • 1 cupcelery
  • 1 cupbell pepper
  • 2 (4 oz)cans green chilis
  • 2 (11 oz)can shoepeg corn
  • 1 (4 oz)jar chopped pimento
  • 1 (15 oz)can black beans
  • 1 (15 oz)can pinto beans
  • 1 (15 oz)can garbonzo beans (chick peas)
  • 1 (15 oz)can black eyed peas
  • 3/4 cupdistilled white vinegar
  • 1 cupsugar
  • 1/2 cupvegetable oil
  • 2 tbspwater

Steps

  1. 1

    Dice red onion, celery and bell pepper

  2. 2

    Open and drain all canned vegetables

  3. 3

    Combine all vegetables in a large bowl, mix

  4. 4

    In a small pot, combine vinegar, sugar, oil and water. bring to brief boil. let cool

  5. 5

    Pour cooled mixture over vegetables. mix

  6. 6

    Add salt and pepper to taste

  7. 7

    Let combined ingredients set in refrigerator over night to gel

  8. 8

    Eat with corn chips, etc.

  9. 9

    Enjoy
