Ingredients

  1. 2 lbTri Tip roast.
  2. 1/2 tbspKosher salt
  3. 1 tbspBlack pepper
  4. 1 tspGarlic powder
  5. 1/2 tbspPaprika
  6. 1/2 tspSeason salt
  7. 1/4 tspCayenne pepper
  8. 1/2 tspCumin
  9. 1 tspMustard
  10. 1/3 cupRed wine vinegar
  11. 1/3 cupExtra virgin olive oil
  12. 5 cloveGarlic
  13. 2 tbspLemon juice

Cooking Instructions

    Combine all spices, except garlic cloves, in a small bowl. After mixed rub on all sides of the roast. Cover or place in ziplock bag. Refrigerate for at least 3 hours. Remove and let stand for 30 minutes before cooking.

    Place mustard, vinegar, oil, garlic, and lemon juice in a blender. Blend until mixed well.

    Prepare charcoal or gas grill. Place roast on grill and brush with oil, vinegar mixture. Place over direct heat for first 5 minutes, turn and repeat basting and cook time. After both sides are browned move off of direct heat or lower coal bed. Turn every 5 to 7 minutes basting with each turn. Monitor with thermometer for desired welness.

    After reaching desired temp place over direct heat for 2 minutes on each side. Remove from heat and let rest for 15 minutes before slicing.

Made a 2.5lb roast yesterday using this recipe as written, except I added onion powder in equal parts to the garlic powder for the rub and roasted it in a hot (500F) oven until medium rare. It is now gone. My sons' actions tell you all you need to know...
