Ingredients

  1. 2 1/2 cupShredded zucchini
  2. 1 cupUnsweetened applesauce
  3. 1/2 cupCanola oil
  4. 3/4 cupFat free egg product
  5. 2 tspVanilla
  6. 1 1/2 cupSugar
  7. 1 1/2 cupFlour
  8. 1 1/2 cupWhole wheat flour
  9. 3 tspGround cinnamon
  10. 1 tspBaking soda
  11. 1 tspSalt
  12. 1/4 tspBaking powder
  13. 1/2 cupChopped walnuts or pecans

Cooking Instructions

    Heat oven to 350°F. Spray bottoms only of two 8x4 inch loaf pans with cooking spray.

    In large bowl mix zucchini, applesauce, oil, egg product, vanilla and sugar until well blended. Stir in remaining ingredients. Spoon batter evenly into prepared pans.

    Bake 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of loaves. Remove from pans and cool completely
